The Wild Fermentary
The ethics of permaculture run deep in our culture - Earth Care, People Care and Fair Share are at the heart of everything we do. We favour local growers, sustainable foraging, NZ sea salt, glass jars and no plastic in our fermentation process. We forage wild edibles and healing herbs from our home garden 'farmacy', and use every edible part of the ingredients we can; distributing what we don’t use around our community, feeding local chooks, pigs, worm farms and compost bins. Because we believe this makes a difference to the quality of our ferments and to Mother Earth.
